Kadhai
Your choice of meat, stir-fried with finely
chopped onions, ginger, garlic and green chillis.
Cooked in the juice of tomato and the meat juice, with no or minimum
water. This is then sautéed with strips of
different bell peppers, and then finally finished with Kasoori Methi
powder and special Kadhai masala.

Dhansak
One
of the most popular Parsee dishes. The Parsee fled from Persia to
avoid religious persecution in the 13th C and settled on the western coast
of India, in what is the state of Gujarat. This is quite a simple
dish cooked with lentil, vegatables and meat, having a tinge of a sweet
and sour taste (like most of the Parsee dishes)

Dopiaza
Do’ means two, ‘piaza’ means onions in
Hindi and the term describes a dish using twice the normal amounts of
onions. History tells us that a very famous barwarji (chef) 'Mullah
Do-Pizza' who was at the court of King Akbar (Great Moghal Emperor) is
supposed to have cooked all his dishes with but 2 onions hence Do-Pizza.

Another, very popular Parsee dish which
is fairly hot. This dish consists of slit green chillis, squares of
onion, bell peppers, and then its stif-fried and served with the meat of
your choice. Like all Parsee dishes it has a slight hint of sweet
and sour taste.

Korma
Korma
dishes originated in the courts of the Moghal King. This dish has
very rich, thick gravy owing to the use of yoghurt and nuts along with
lots of expensive spices and flavourings. Such as cardamon, nutmeg,
saffron, even rose water and kewra (Screwpine flower). It's a true
dish fit for kings and queens. The heat comes from the use of fresh
green chillis or white pepper. But here in the UK Kormas have come
to mean something very mild and creamy. It seems to have been
redefined for those who do not like their food hot. Here in
Victoria's India we would like to stick to the original style of cooking
Korma though keeping in mind the lovers of milder tastes. Therefore
please expect you Korma to be of milder taste.

Rogan Josh
Rogan means meat fat and Josh
literary means heat. This dish originates from the Northern Indian
state of Kashmir, which is cold. Traditionally fatty meat on the
bone is used for making Rogan Josh it is then slow cooked in its own fat,
with extra added fat, for an intense flavour. However, in these days
of cholestrol consciousness, we avoid the animal fat and use a minimum,
amount of oil. The dish gets its heat and intensity from the
gererous use of body heat inducing
ingredients, including spices such as large black cardamom
and cloves.

Vindaloo
Vindaloo
is one of the signature dishes of Goa (State of India) and it illustrates
the fusion of Indo-Portugese cooking which Christian Goan food is about.
Here, the hot (Chilli), sour (Vinegar), sweet (Jaggery) flavour must be in
balance. The word Vindallo comes from the combination of Vin
(vinegar) Aloo (Allu Portugese for garlic).
In Goa however the heat is hardly its chief characteristic, rather it's
the combination of spices and the balance of hot, sour, and sweet flavours
that denote this dish character

Tikka Masala
One of the most popular dishes in the UK.
This is an Indian dish, which was most likely to developed by the curry
house in the UK. Is tailored to the tastes of people here. Its
closest relative in India in Tandoori chicken cooked in butter tomato
gravy. Here it is boneless chicken pieces marinated and grilled in
the tandoor. Blended with a curry masala and tomato gravy.
